This recipe is composed of two teaspoons grated lime zest, two tablespoons melted and cooled unsalted butter, two tablespoons fresh lime juice, one teaspoon sugar, one tablespoon vegetable oil, one cup quinoa, one can rinsed and drained black beans, four pieces chopped scallions, two pieces diced tomatoes and one-fourth cup chopped fresh cilantro.
The first step towards preparing this healthy dish is to whisk lime zest and juice, oil, sugar, butter, salt and pepper together in a bowl. This mixture will serve as the dressing. Rinse quinoa using cold water and drain it using a sieve. Cook quinoa by putting it in a pot containing boiling salted water. Cook it for ten minutes. Drain the cooked grain using a sieve and steam it by setting the used sieve in the same pot containing simmering water. Use a folded kitchen towel to cover the grain and then cover the sieve using a lid. The steaming process should take ten minutes. Once done, you should get the pot out of heat. Remove its lid and allow the quinoa to cool for five minutes. Add the steamed grain into the prepared dressing and toss everything. Add the remaining ingredients into the mixture including salt and pepper. Toss the mixture again before serving.
